Is there any way to change the time format from GMT to CT or ET using SORT or Easytrieve. Please provide me an efficient way.

Yes you can. what is the format of date and time? what is the lrecl of the file? All you need to do is convert the GMT into seconds and subtract 6 hours from it which gives you CST time. if you want to consider the day light savings then you need to subtract 5 hours.
